Namaaz claims to be the first to introduce molecular gastronomy in Indonesia, serving up innovative dishes that are mostly renderings of popular Indonesian cuisine in exceptional presentations. While the settings, style and ambiance easily makes it a fine dining restaurant, the team behind Namaaz would rather you label it as ‘fun dining’. Enjoying a dinner here is not only satisfying to the taste buds, but also pleasing to the eyes, as young and talented Indonesian Chef Andrian Ishak goes around preparing some of his playful creations right before guests at their tables.
Namaaz Dining is conveniently located on a corner of Jalan Gunawarman in Kebayoran, South Jakarta. To score a booking at Namaaz means that you are entitled to an approximate three-hour sit-down – an entertaining showcase of meticulously crafted dishes. Dinners usually carry on a theme that change every several months, ensuring your visit next ‘season’ will never be the same. Most of the time, it’s a 17 set-course dinner with menu items that might surprise even those already accustomed to Indonesian fare.
Each dish is a quirky treat. Opor ayam, Indonesia’s favourite light chicken curry, does not even come close to its usual appearance as a bowl of soup, instead resembling a paper note and pencil. The main course of nasi bakar cabe ijo or grilled green chilli rice looks like a big black spider served in a stylish wooden bowl. A dessert comes looking like a soap bar complete with foam and a rolled towel on the side is called pencuci mulut, which means ‘dessert’ in Indonesian but roughly translates to ‘mouthwash treat’. Or on another occasion, edible IDR 100,000 bills are served on a bonsai money tree.
Chef Andrian uses scientific techniques to produce his wacky dishes. Watching him prepare some dishes at your table, complete with special utensils and misty dry ice, is like viewing a magic trick, or witnessing a mad scientist going through some wild experiment. Some other elements take long hours or even days to prepare. The restaurant is open for dinners only and advanced bookings are recommended to secure your seat. Prices start from IDR 1,155,000.
